Lactose and sugar free ice cream

My dear friend visited me yesterday and we were talking about our diet and how to replace milk in some of the recipes as my son is lactose intolerant. She loves ice cream and just had some lactose free ice cream in my fridge. She loved it. I keep my promise to share the recipe. Here are our kids favourite combinations.

Mixed berries ice cream

Ingredients

  • 1 cup frozen mixed berries
  • 1 frozen ripe banana (very very ripe banana, the darker the better)
  • 2 tablespoons coconut milk

Method

  1. Mix all the ingredients in a food processor until you’ll get the creamy ice cream consistency.
  2. Serve it with fresh fruit.

Strawberry ice cream

Ingredients

  • 1 cup frozen strawberries
  • 1 frozen ripe banana (very very ripe banana, the darker the better)
  • 2 tablespoons coconut milk

  2. Serve it with fresh fruit.

Mango-banana ice cream

Ingredients

  • 1 frozen mango
  • 1 frozen ripe banana (very very ripe banana, the darker the better)
  • 2 tablespoons coconut milk

  2. Serve it with fresh fruit.

I love to sprinkle top of the ice cream with goji berries to boost our immune system. I just love how crunchy the goji berries are when mixed with cold beverage or ice cream.

Tip: Anytime you have some ripe bananas on your counter, put them into the freezer and you can use them later for ice cream or morning shakes. It is very convenient in the morning just blend everything together from the freezer.
