Energy balls recipe

Recently I added this energy ball recipe to our favourite ones. I like recipes that are easy to prepare and taste amazing, and the whole family can enjoy them. You can eat them for breakfast, before or after workout, you can pack them to your lunch box or to your kids snack box. Everybody will be happy to find them in their bag, believe me.

Ingredients

Paste

  • 16 pitted dates, for medjool dates even 10 is enough
  • 1 cup raw cashew nuts
  • 2 tablespoons cocoa powder
  • 2 teaspoon coconut milk or more if needed
  • 1 teaspoon vanilla extract
  • 1/4 cup roasted and salted almonds, finely chopped – use for coating
  • pinch of salt

Coating

  • 1/4 cup roasted and salted almonds, finely chopped – use for coating

Method

Blend all the ingredients together in a food processor. Blend until you create a nice sticky paste.

  1. Blend all the ingredients, except the one for coating, together in a food processor. Blend until you create a nice sticky paste.
  2. Roll round balls from the mixture using your hands. Make the balls 40 – 50 mm in diameter.
  3. Cover the balls in coatings on a separate plate – in this recipe use salted almond meat.
  4. Put them into the fridge for about an hour.
  5. You can store them in small plastic containers ready to go.
  6. Enjoy them 🙂

There are many variations possible, I will keep you updated with new recipes as I want to try some savoury ones. I might add some super-powders in as well.
